  • How to Cook Fluffy Brown Rice - "Bikkuri-Daki"

    It is difficult and time consuming to cook brown rice well. Now, we are excited to share with you a fantastically simple way to cook fluffy and delicious brown rice, it's called "bikkuri-daki." The word bikkuri means surprise and daki means to boil, in Japanese. The surprise, which we will explain below, shocks the grains of rice into splitting their shells, and this results in a fluffy texture.
  • Miso Healthy Stew

    This recipe was a happy accident. I wanted to make a Lentil, Kale, Quinoa stew, which I made recently and loved, but I didn’t have the chopped tomatoes that I thought I had. For the past two months I have been kind of challenging myself to use up food from the pantry where there are large sacks of rye kernel, lentils, quinoa, spices, buckwheat flour, etc. This stuff is mostly left over from when we closed the Abokichi sandwich shop and café. We like the miso soup version of this recipe even better than the original tomato. I would happily make this over and over again. This is not a Japanese dish and yet the miso flavour works so well.

    (Lentil, Kale, Quinoa, Black Bean, Sakekasu Miso)

  • Sweet Potato Dumplings in a Miso Dashi broth

    Sweet potato dumplings! Think of the texture of gnocchi but sweeter with the presence of sweet potatoes! Our favourite is to have them swimming in an earthy miso and dashi broth with a touch of okazu for a little kick. A quick and hearty dumpling soup perfect for breezy summer evening. Enjoy:)

  • Spicy OKAZU Chili Miso Oil Hummus

    Ingredients

    • 1 can of Garbanzo beans (chickpeas), drained
    • 1 clove garlic
    • 2 tablespoon lemon juice
    • Pinch of salt
  • Easy Vegan Chili Miso Roasted Eggplant Dip

    Vegan chili miso roasted eggplant dip? Yes please! Roasted eggplant is one of the best flavours in our opinion. The eggplant captures a smokey, roasted flavour that is so detectable and mouth-watering. It pairs unbelievably well with the chili miso, it actually surprised us when we first tried it! This recipes makes for an easy, healthy snack.
  • Vegan OKAZU Muffin

    You can make savory muffins with OKAZU! They're easy and delicious, and you can make 6 of them with this recipe! 

    • Dairy free / no sugar added amazake dressing

      This recipe is really simple and great for summer salads. The dressing gets its rich flavour from amazake which also adds a bit of natural sweetness. Bonus: it's low in fat and probiotic too!

    • Chikuzen-ni: Japanese Stewed Root Vegetable

      This dish originates in the northern-most part of Kyushu, one of Japan's four main islands. Chikuzen-ni falls under the category of nimono, or boiled things. This is Japanese comfort food and this dish can be made on large quantities to keep in the fridge for bento-making, or as a side dish at dinner time.
