Saikyoyaki is a simple and delicious broiled fish dish. It is first smothered in white miso paste, then wrapped in plastic wrap to marinate in the fridge for two days. This gives the fish a deeper flavour with no fishy smell compared to just baking it with salt. -

It is difficult and time consuming to cook brown rice well. Now, we are excited to share with you a fantastically simple way to cook fluffy and delicious brown rice, it's called "bikkuri-daki." The word bikkuri means surprise and daki means to boil, in Japanese. The surprise, which we will explain below, shocks the grains of rice into splitting their shells, and this results in a fluffy texture. -

Sweet potato dumplings! Think of the texture of gnocchi but sweeter with the presence of sweet potatoes! Our favourite is to have them swimming in an earthy miso and dashi broth with a touch of okazu for a little kick. A quick and hearty dumpling soup perfect for breezy summer evening. Enjoy:)Serves 4

Dairy free / no sugar added amazake dressing
This recipe is really simple and great for summer salads. The dressing gets its rich flavour from amazake which also adds a bit of natural sweetness. Bonus: it's low in fat and probiotic too!

This dish originates in the northern-most part of Kyushu, one of Japan's four main islands. Chikuzen-ni falls under the category of nimono, or boiled things. This is Japanese comfort food and this dish can be made on large quantities to keep in the fridge for bento-making, or as a side dish at dinner time. -
