OKAZU Soba Noodles with Miso Avocado Sauce
SOBA NOODLES WITH MISO AVOCADO SAUCE

A perfect bowl of noodles for a hot, summery day. Recipe adapted from Oh She Glows.
Serves: 3-4 servings
INGREDIENTS
- 9 oz soba noodles
- 1 large avocado
- 2 tbsp white miso
- 1 garlic clove
- 2 tbsp green onion (green part), chopped
- 2 tbsps lemon juice
- 2 tbsps water
- Salt, to taste
- Okazu, to taste
DIRECTIONS
- Cook soba noodles according to package directions. Rinse with cold water and set aside.
- Scoop out the flesh from the avocado and add to a food processor. Add the miso, garlic, chopped green onion, lemon juice and water. Process until smooth.
- Toss the soba noodles in the sauce. Add a heaping tablespoon of Okazu (or more!)
NOTES
Add your favourite vegetables to customize this meal. I'm eager to make this again using shelled edamame, broccoli and carrots.
